Mexican Casserole
This is another family favorite- we always have these ingredients on hand and we love casseroles around here. Thanks to my friend Deb for passing this recipe on to me years ago- we’ve made a few changes based on our family’s preferences and so can you!
1 pound ground beef or ground turkey
1/2 cup diced onion
8 small flour tortillas torn into pieces
1 cup sour cream (we use light)
2 cans cream of mushroom soup (we use reduced fat)
8 oz salsa or taco sauce
1 cup corn
1 can black beans (rinsed and drained)
1 can sliced olives
1 can evaporated milk
2 cups grated mexican cheesePreheat over to 350 degrees. Brown meat and onion. Combine all ingredients- reserving a little cheese to sprinkle on top. Bake in a 9×13 dish for 30-35 minutes and serve with chips.
