  • Meal Plan April 10-16

    What are we having for dinner this week?

    Sunday- orange beef

    Monday- hamburger and potato casserole

    Tuesday-  pork chops with basil and parsley

    Wednesday- ham and beans crockpot

    Thursday- freezer grab (I’m going to grab one of the prepared meals that’s sitting in my freezer and reheat!)

    Friday- salmon

    Saturday- Amish Yumazuti (Bunco night)

  • “Swedish Meatballs”

    We enjoyed a new recipe tonight.  I found a recipe for Swedish Meatballs online- after reading all of the reviews I altered it according to some of the suggestions.  I don’t know how Swedish these are, but I thought it turned out yummy!  Hooray!

    1 bag of meatballs (or enough from the Costco bag to feed your family- unless you’re one of those people who makes her own meatballs… then you’re on your own!)
    1 can cream of chicken soup
    1 can cream of mushroom soup
    1 can evaporated milk
    several dashes of Worcestershire sauce
    several dashes of nutmeg

    1 cup sour cream

    1/2 pkg cooked egg noodles (we use whole grain)

    Throw first 6 ingredients in the crock pot on low for 4 hours.  Add  sour cream before serving over egg noodles.

    Super easy and yummy!

  • Mushroom Garlic Chicken with Artichokes

    I tried this yummy new recipe out of my 365 Days of Chicken cookbook the other night.  I was planning to make Chicken Piccata and then came across this gem.  I never like dredging my raw chicken breasts in flour for some reason (I know, I’m quirky like that) and when I saw that this recipe skipped that step I was sold!  Of course I didn’t follow the recipe exactly, but this is what I did and it turned out great!

    Mushroom Garlic Chicken with Artichokes

    4 boneless skinless chicken breasts
    salt and pepper to taste
    2 TBS butter
    4 cloves crushed garlic

    1 TBS olive oil
    4 (more!) cloves crushed garlic
    4 oz can sliced mushrooms
    14 oz can quartered artichoke hearts (drained)
    2-3 TBS white wine
    2 TBS lemon juice

    Season chicken with salt and pepper.  Melt butter in large frying pan and cook garlic 1 minute.  Add chicken and cook until both sides are lightly browned.  Remove to a plate.

    Add olive oil to same frying pan and cook remaining garlic about 1 minute.  Add mushrooms and cook about 3 minutes then add artichoke hearts and cook one or two minutes until heated through.  Add wine and lemon juice and bring to a boil, stirring until mixture thickens.  Add chicken back to the pan, cover and cook until chicken is cooked through with no pink remaining.

    Serve with rice or pasta.

  • Meal Plan April 3-9

    What are we having for dinner this week?

    Sunday- Seder dinner at our church

    Monday- bisquick chili bake (I know I put this up last week, but we didn’t have it!)

    Tuesday- chicken piccata with broccoli (I learned last week that broccoli is Chris’ favorite veggie- I guess we’ll be eating it more often from now on!
    (edited to say I ended up making this yummy recipe instead, because I’m flexible like that!)

    Wednesday- pasta fagioli soup- crockpot

    Thursday- swedish meatballs with pasta

    Friday- dinner with our small group

    Saturday- orange beef?

    My parents are leaving Monday which means things will settle down some around here (boo hoo), but Chris’ track season has started which means he doesn’t get home til dinner time or later every night- ugh.  This means no help with the kids while I’m prepping dinner and keeping the kids up later than I’d like for dinner and bedtime.  I’m starting to count down the days until June and summer vacation!

  • Bunco Night

    Looking for a fun night out that will also support a great cause?  Join me and some of my friends at a Bunco night supporting Noah’s Ark orphanage in Mali, Africa.

    What are the details?

    It’s Saturday April 16 at 6pm at the Lone Tree Rec Center (Lincoln and Yosemite).

    There will be refreshments, awesome prizes, laughter and Bunco!

    Your $25 ticket will provide meals for 10 kids for an entire month!  That’s right, if you come play Bunco you will be feeding 10 children in Africa- for a month!  How can you say no to that?

    Bring your spouse or a few friends.  Bring some friends AND your spouse!  Fill up a table!  Or two!

    Live out of town?  Have plans for the 16th?  Consider donating!  Every dollar counts.
