What are we having for dinner this week?
Sunday- Mexican Lime soup
Monday- fried rice
Tuesday- orange beef
Wednesday- tilapia
Thursday- leftovers
Friday- pork chops
Saturday- cheesy beef stroganoff
Say what? I’m still cooking every night? Well, I’m not- we had a ton of leftovers last week, so we ate leftover twice and went out twice. Now we’ve eaten most of that and I have to start cooking again. At my OB appt on Friday (also my due date) she said they’ll let me go 10 days before they will induce me. I’m ok with that, I feel pretty good, I’m on week three of a cough and cold that I’d like to get over, and my parents won’t be arriving in town until the 8th, so I guess we’ll just keep on keeping on until the end!

Random calendar idea
Somewhere on the world wide web I saw this simple idea for learning the calendar and practicing numbers and writing with preschoolers. JT and I have been doing it since the beginning of the year and he LOVES it- he looks forward to it every night. We hung a calendar in his bedroom and every night before bed he writes the day’s date and then makes a big X on the square for the day.
We also write in something that happened that day (preschool or snow or played with friends) and talk about the things that are coming up in the next few days and weeks. It’s a simple way to encourage him to practice writing his numbers and to start reinforcing the days of the week and grasping the concept of the calendar and time.
Try it with your preschooler!

What are we having for dinner this week?
Sunday- shrimp enchilada bake
Monday- Mexican Lime soup
Tuesday- chicken crescent roll casserole
Wednesday- French dip
Thursday- fried rice
Friday- orange beef
Saturday- tilapia
No baby yet, so I’ve had to plan another week’s worth of meals! (big sigh)

Valentine’s Cinnamon Rolls
I saw this cute idea on Pinterest and decided to make them for breakfast for Valentine’s Day this year. I cheated and bought Pillsbury cinnamon rolls and made those- they still turned out yummy!
I simply removed the rolls from the exploding tube, partially unrolled each one, and then rerolled it into a heart shape.
Oops- I forgot to take a picture before I started frosting them!
Didn’t they turn out pretty? When they came out of the oven they had flattened enough that it was a little hard to tell they were in the shape of hearts,
but a quick pinch with my fingers as I was serving them helped a lot!
Easy, yummy and festive. Perfect!

Sunday- Mediterranean Shrimp Skillet
Monday- taco salad
Tuesday- white chicken lasagna and these cinnamon rolls for breakfast!
Wednesday- Italian crockpot chicken
Thursday- homemade mac n cheese for Kate’s 2nd birthday!
Friday- shrimp enchilada bake
Saturday- meatloaf
Please please please let this baby come before I have to make all of these meals. Please.

Sunday- Super bowl party! Junk, junk, junk for dinner!
Monday- cheesy chicken parm
Tuesday- meatloaf and mashed potatoes
Wednesday- pasta fagioli soup
Thursday- salmon
Friday- twice baked potatoes
Saturday- taco salad
I’m praying that I have the baby sometime this week and that several of these meals will be cooked by the lovely staff at the hospital. But we’ll just have to see about that…
